Nurtured by the nitrogen-rich volcanic soils of the adjacent volcano, these Caturra and Castillo trees thrive under a natural canopy of citrus and banana trees. The region's unique microclimate—characterized by warm, sunny days followed by cool alpine nights—slows cherry maturation, allowing the beans to develop a concentrated density of natural sugars and a crisp, complex acidity.
